A healthy and delicious side dish you can indulge in

Here’s my take on a side dish I don't feel guilty eating. I make this recipe — or a version of it — weekly. I eat as much as I want, and my family of picky eaters enjoys it, too. 

Broccoli — a green powerhouse

Broccoli is full of nutrients and it's something that I make a regular part of my and my picky family's diet.  Not only is it a great source of fiber, vitamins, and minerals, but it's also delicious. One of my favorite ways to enjoy broccoli is by roasting it in the oven, which brings out its natural flavor and enhances its texture. With the following recipe, I'm happy to share my take on a simple yet tasty roasted broccoli recipe that's sure to become a part in your weekly meal planning. 

Ingredients

1 large head of broccoli
(or whatever amount suits you and your family) 
Some drizzles
of olive oil
Some turns
of fresh ground black pepper & sea salt 
Any other spices or dressings that you like
(I like to finish mine off with balsamic vinegar drizzled after it's done roasting)  

Directions

Preheat your oven to 425°F and line a baking sheet with aluminum foil or parchment paper.

Thoroughly rinse your broccoli and use a clean towel to pat dry.

Cut your broccoli into bite-sized pieces and spread them out evenly on the baking sheet.

Drizzle the olive oil over the broccoli and sprinkle on the salt and pepper and any other spices you prefer.

Use your hands to toss the broccoli until it's coated evenly with the oil and spices.

Roast the broccoli in the oven for 20 to 30 minutes, or until it's tender and a bit charred around the edges.

Remove from the oven and let it cool for a few minutes before serving.

It's optional, but I highly recommended you drizzle the broccoli with balsamic vinegar before serving. 

Tips 

  • Make sure your broccoli florets are roughly the same size, so they cook evenly. 
  • Don’t crowd the baking sheet — the broccoli might steam if it is crowded (and probably get a little mushy) instead of roast.  
  • If you want a little extra flavor, consider some adding grated parmesan cheese or lemon juice before serving. 
  • Go easy on the salt — a little goes a long way. Too much sodium in your diet can be bad for your health.  
  • I never have leftovers, and I think they may get mushy when reheated, but I'm sure you could store in an airtight container — not for too long — maybe a day or two.
