Healthy Oatmeal Muffins

Ingredients

1 cup
rolled or steel-cut oats
1 cup
almond flour
2
eggs
1 tsp.
pure vanilla extract
1 tsp.
ground cinnamon
1/2 tsp.
ground ginger
1/2 tsp.
maple syrup
1/4 cup
unsweetened almond milk
2 tbsp.
coconut oil (melted)
1/2 tsp.
sea salt
1/2 tsp.
baking powder
1/2 tsp.
baking soda
2 tbsp.
chopped almonds (optional)

Directions

Mix the dry ingredients in a small bowl, and in a separate bowl, mix the wet ingredients.

Add the two together.

Fill a muffin tray halfway and bake for 20 minutes at 350 degrees.
